MEET THE CHEF - Dan Picard - Daniel's Bistro and Daniel's By the Sea
So here's a lesson for all the aspiring chefs out there....to get to the top of your profession you have to work hard, you have to learn from everyone you work for and you have to be able to overcome the curves life thro
ws at you.

Dan Picard, chef/owner of Daniel's Bistro in Point Pleasant and Daniel's by the Sea in Avon didn't go to culinary school. He started working in restaurants at 18 when he got a job at L'Auberge de France in North Jersey because he spoke French (he's originally from Montreal). There he learned classic French cooking techniques. From there he moved to Martha's Vineyard, a Northern Italian restaurant in Clifton as a broiler and three years later became Executive Chef, honing his skills with another cuisine. When the owners of MV bought the Water's Edge in Bayville, Picard got his first taste of the Jersey Shore and spent 5 years there as Executive Chef. Next stop was La Cipollina in Freehold and the first recognition of his talents by the media when his restaurant was awarded 3 stars by the Asbury Park Press.

In 2009, after another short stint up north, Dan and his wife and business partner, Karen, decided the time was right to open their own restaurant and they wanted to do it at the Jersey Shore. They found a spot in Point Pleasant on Broadway and put their heart, soul and savings into it. Word spread quickly about this new little place that was serving up food with incredible flavors and textures in a fine dining atmosphere. Business was so good they decided to open another, larger restaurant right down the street. One would have a French flair, the other Italian. Then came Sandy and they lost it all.

As we saw so often during that period, people picked themselves up from the disaster and found a way to move on...Picard was one of them. He found a small space in Avon and shortly after the storm opened Daniel's Bistro by the Sea. Then, he, friends and staff re-built the Point Pleasant space and opened within a year. Today, both restaurants are thriving, a testament to the Picard's perseverance.

How does a fine dining restaurant survive and succeed in an era of "casual" dining? In this case it is Picard's unwavering vision of what he wants his restaurant to be and his unwillingness to compromise. There are lots of ways to cut corners and save money in the restaurant business, but Picard won't have it. He uses prime meats, Bershire pork, fresh (not frozen) fois gras...he even orders his ice cream from Nasto's in Newark because to him it is the best available. His soups are made from scratch and are worth a visit by themselves. Diners are treated to an amuse bouche before each meal and homemade brownies at the end. Rolls are served hot and French style and many of the desserts are prepared and served table side.

Jokingly, when asked to describe his philosophy, Picard said, "just call me a pirate" and so we do.....

Montecariano is a family-owned boutique winery located in the heart of the Valpolicella region near the village of San Pietro in Cariano. The winery is situated in hilly terrain surrounded by olive trees, cypress, cherry trees and large oaks. It's owned and operated by Mariella Gini, along with her two sons, Matteo and Marco. They cultivate the traditional varietals of Valpolicella while preserving other indigenous grapes of the region.
Montecariano is very well-regarded and known for small-production wines of great quality. Recently the winery's 2011 Amarone received a 94 point rating from Wine Enthusiast.

5 changes to Facebook Pages: What Page Admins need to know

"If it ain't broke, don't fix it."

Facebook obviously does not subscribe to that adage. Instead, they change functions that were intuitive and make them more complex, difficult to locate, and time-consuming.

That's the case with the latest update to Facebook Pages.

I manage several Facebook Pages for our clients.  A few days ago, the "Login as your page" feature disappeared from my Pages Manager screen.

After some experimentation, I discovered that I can still post and schedule updates as a Page's persona. But I hunted all over and couldn't access the "Home" News Feed for the Pages I manage. Like most Page admins, I like, share, and comment on content via the persona of the Page (NOT from my personal profile).

In a panic, I reported this to Facebook.

Wonder of wonders… they actually responded (that's a first)!

Facebook writes:

"We recently removed the ability to log into Facebook a Page you manage. Instead, we've introduced new features that allow you to do all the same things you could previously do without requiring you to log into Facebook as your Page."

Facebook's response included information that will benefit all Page admins, so I created 5 mini tutorials to acquaint you with the five major changes.

Note: These instructions are for desktop users. If you manage Pages via a mobile device, I recommend downloading the Pages Manager app:

How to like or comment as your Page

This change is easy to master. Go to the Page post you want to like or comment on.

Below the post, in the Like/Comment/Share area, you'll see a thumbnail icon on the far right. Click the downward-pointing arrow, and a link to your personal profile PLUS a list of all the Pages you admin, will display.

The thumbnail image will change to that Page's persona so you'll know you've selected the correct page.

Change #2:
How to view the Home feed of other Pages

This is the feature I hunted all over for and couldn't find. Turns out, it was hiding in plain sight.

Go to the Page you administer.

On the left side of the Page, below the cover photo, you'll see a module that shows how many likes the Page has received this week, post reach, and other options. Buried in the middle of that module is a link that says,

"View Pages Feed
See Posts From Other Pages"

5 changes to Facebook Pages: What Page Admins need to know | BloggingBistro.comClick it. You can now view the "Home" feed for that Page – in other words, you'll see updates from other Pages that Page has liked.

Interesting fact: You can also view the Pages Feed from Pages you DON'T administer, as long as you have liked that Page as your Page. Read on (Change #3) for how to do that.

Change #3:
How to Like another Page as your Page

Because you can no longer login to your Page's persona, this function has gotten more convoluted.

Let's say you want to like Blogging Bistro's page from your Page's persona.

Give it a try: Go to the page you plan to like.

Click the "3 dot" icon on the Page's cover photo.

A popup dialogue box will prompt you to select a Page from which you want to like. Click the downward-pointing arrow, select the correct Page, and then click "Save."

Change #4:
How to publish on another Page's Timeline as your Page

In this case, you will be publishing an update to someone else's Facebook Page via the persona of a Page you administer.

Go to the Page you want to publish on.

Create your status update or Photo/Video.

At the top right of the update, you'll see a tiny profile picture. Click the downward-pointing arrow and choose the Page from which you want to post the update. The icon will change to the one that represents the Page you selected.

Click the blue "Post" button.

How to feature other Pages on your Page

 As a Page admin, you have the option to feature links to other Pages you like in a module on the left side of your Page's Timeline.

I feature the Facebook Pages of some of our clients in this module. (Unfortunately, no one is likely to see the module because Facebook buries it at the bottom of the Page.)

Before you can feature another Page, you first need to like the page as your Page.

At the top of your Page, inside the white bar that lists various tabs, click "Settings" (it's on the right).

In the left column, click "Featured."

5 changes to Facebook Pages: What Page Admins need to know | BloggingBistro.comClick "Add Featured Likes." (If you have already added featured likes, the button will say, "Edit Featured Likes.")

A list of Pages you've liked (as your Page) will display. Click the box next to the pages you want to feature. You can click as many as you want, and Facebook will rotate among the ones you selected, displaying three at a time on your Page.
